Open Source Salon with Tom Calver

Ever wondered about the difference between raw and pasteurised milk, or how science is changing cheese production for the future? For our June Open Source Salon, we are thrilled to welcome our local, yet world-renowned, cheese maker, Tom Calver from Westcombe Dairy. Tom will answer these questions and more, during an interactive tasting and dinner, designed around the award-winning cheeses he produces, alongside his father Richard, at Westcombe Dairy. During the evening, Tom will introduce us to the exciting and innovative life at Westcombe Dairy, which boasts over 100 years production of some of the world’s most renowned cheddar. He will give us an insight into the fascinating world of microbes, Westcombe’s new cheese turning robot (the world’s first), and artisan cheese production – and as always – questions and participation from the audience are welcomed! Open Source Salon is a discussion group for like-minded creatives and enthusiasts who meet monthly to exchange ideas, hear special guest speakers, and enjoy local food and drink. Each salon consists of a specially invited speaker who will share their unique knowledge and experience on one of the four key themes at the heart of Hauser & Wirth Somerset – Art, Architecture, Landscape, and Food.
