Roth Bar & Grill

Housed in the old cowshed of Durslade Farm on the grounds of Hauser & Wirth Somerset, Roth Bar & Grill combines gastronomy with art, offering a vibrant, informal eating-place, serving honest, simple and seasonal food. The restaurant adopts a farm-to-fork practice and works closely with local farmers, gamekeepers and gardeners, to use ethical produce with a focus on sustainability.

At the restaurant’s core is a site-specific bar, created by long-term gallery friends and artists, Björn and Oddur Roth (son and grandson of artist Dieter Roth) and is comprised of scavenged materials – a central motif throughout Dieter Roth’s work.

The interior combines an open kitchen with a Robata grill and spit, while the dining room walls are adorned with an intimate array of works that intertwine the themes of food, animals and the countryside. Works on show in the dining area range from Henry Moore’s drawing of lobster claws to a vibrant lightbox by Rodney Graham. The hang incorporates works by Hauser & Wirth’s family of artists alongside pieces from the private collection of Iwan and Manuela Wirth.

Beyond the gallery, Durslade is a working farm and the livestock born and bred there are served at Roth Bar & Grill, including Aberdeen Angus, Wagyu and Hereford cattle, as well as Lleyn sheep, Oxford Sandy and Black Pigs. The meat is dry-aged in a purpose-built Salt Room, lined with over 500 hand-cut Himalayan salt bricks, allowing it to tenderise during this traditional process. Using an artisan technique, the kitchen team also salt cure meats, adding ingredients such as wild garlic and creeping savoury. These culinary herbs are provided by the Kitchen Garden, which is situated at the entrance of the farm and supplies the kitchen with year-round seasonal vegetables and edible flowers that are grown using a no-dig method.

Roth Bar & Grill’s ‘Art in the Bar’ bespoke cocktails are named after and inspired by the works of art at Hauser & Wirth Somerset. Other local drink producers on offer include Black Cow vodka, Newton House Gin and Somerset cider brandy from Julian Temperley’s distillery.

Roth Bar & Grill is committed to connecting guests with the farm, restaurant and gallery activity through a diverse programme of events and workshops. The events calendar includes ‘Uncut’ butchery and ‘Unhooked’ fishing courses, as well as intimate curated dinners with notable chefs and food writers. Collaborative events with Hauser & Wirth Somerset include Open Source Salon, a discussion group for like-minded creatives and enthusiasts who meet to exchange ideas, hear special guest speakers, and enjoy local food and drink.
